Gazpacho

Ingredients:

• 1 red pepper, deseeded and chopped
• 3 red tomatoes, chopped
• ½ fennel, chopped
• ½ cucumber, peeled and chopped
• ½ onion, chopped
• 1 clove garlic, peeled and crushed
• 300g passata or 1 tin chopped tomatoes
• 50ml olive oil
• 3 dashes of Worcester sauce
• 1 dash Tabasco sauce
• 10g fresh basil or 5g dried basil
• Sea salt
• Freshly milled black pepper

Preparation Time:

15 min

Method:

1. Prepare all ingredients as above.

2. Place into a food processor or blender. Blend until smooth.

3. Pour liquid through a flour sieve to remove any seeds or skin.

4. Put the strained gazpacho into Pyrex All in one dish and place into refrigerator to chill.

5. To serve: Divide into serving bowls, garnish with a toasted crostini topped with chopped tomatoes, cucumber, onion and fennel.
