Frittata

Ingredients:

• 1 large sweet potato, peeled and cut into
chunks sea salt / freshly milled black pepper to taste
• 200g (7oz) frozen peas
• 1 small onion, finely chopped
• 1 garlic clove, crushed
• 1 red pepper, deseeded and sliced into strips
• 8 cherry tomatoes, halved
• 6 eggs, beaten

Method:

1. Cook the sweet potato in salted boiling water for 5 minutes, stir in the peas and bring back to the boil for 3 minutes. Drain well.

2. Heat oil in a medium frying pan and fry the onion and garlic for 2 minutes. Stir in potatoes and peas.

3. Transfer all vegetables to Pyrex multi-purpose dish, and pour over the eggs. Season with salt and pepper, then place into microwave for on high 4 minutes. Place under grill for two minutes to brown before serving.

4. Cut into wedges and serve.

NB.To save time, tinned new potatoes could be used straight from the tin, instead of the sweet potato.
