Five Veg Pasta by Shirley, Torquay
Ingredients:
One medium onion, chopped
A handful of mushrooms, sliced
A medium courgette, sliced
A small red pepper, in chunks
Two tins of chopped tomatoes
A sprinkle of herbs (fresh if possible)
Worcester Sauce
Demerera Sugar
200-300 g of pasta, cooked depending on how much pasta you like to your sauce
Chop the onion and gently simmer in a small amount of water until soft. Add the chopped courgette and red pepper then simmer for a couple of minutes. Add the mushrooms then both tins of tomatoes and mix it all together, then stir in the herbs. Add a dash of worcester sauce and a tablespoon of sugar. Simmer until the pepper and mushrooms are cooked, stirring regularly.
Add more worcester sauce/sugar acording to taste. When you are happy with the flavour of the sauce stir in the cooked pasta until it is all coated with the sauce and serve.
