Feta cheese & pepper salad

Ingredients:

• 1 red pepper, skin removed & cut into strips
• 1 yellow pepper, skin removed & cut into strips
• 200g / 7oz feta cheese, crumbled
• 1 courgette,sliced
• 12g / ½ oz pinenuts, roasted
• 10-15 good quality black olives, stones removed
• 25g / 1oz sun blushed tomatoes (semi-dried tomatoes)
• 30ml olive oil, plus a drizzle for frying
• 12g / ½ oz dried mixed herbs or 25g / 1oz fresh mixed herbs
• juice of ½ lemon
• ½ teaspoon icing sugar
• sea salt
• freshly ground black pepper

Method:

1. Mix the lemon juice with the icing sugar, pour over olive oil. Mix well then set dressing aside.

2. Add a drizzle of olive oil to a hot frying pan, then pan fry the pepper and courgettes until brown, season with salt and pepper.

3. Place the pepper, courgette, pinenuts, olives, sun-blushed tomatoes and crumbled feta into Pyrex bowl, mix well to combine all ingredients. Pour over dressing and sprinkle over herbs. Toss well.

4. Serve immediately.
