Crispy Cheesy Chicken by Slatter, Torrington
Ingredients:
4 chicken breasts
4 packs of 30 g ready salted crisps
200 g grated cheddar cheese
Tsp tarragon
2 cloves garlic
50 g butter
Large knob of butter
Salt and pepper
Cooking Time:
45 minPreheat oven to 180 degrees.
Melt the butter and brush over chicken breasts.
Crush the crisps and mix together with the cheese, tarragon, crushes garlic and salt and pepper.
Coat the chicken in the crisps and put in a Pyrex dish!
If there are any crisps that haven't stuck to the chicken press them on top of the chicken when in the dish. Put a knob of butter on top of the chicken (to stop it drying out) and cover with a lid.
Cook for 45 minutes. Serve with boiled minted potatoes and peas and corn.
