Creamy cod

Ingredients:

• 2 skinless cod fillets, each weighing 175g
(6oz)
• sea salt / freshly milled black pepper to taste
• 50g (2oz) watercress leaves
• 4 rounded tablespoons crème fraiche
• 1 rounded tablespoon horseradish
• lemon wedges, to serve
To serve: seasonal vegetables of your choice

Method:

1. Place cod fillets side by side in Pyrex square optitherm microwave dish. Season with salt and pepper.

2. Roughly chop the watercress and mix in a bowl with crème fraiche, horseradish, salt and pepper.

3. Spoon equally over the cod fillets.

4. Put the lid loosely on top and microwave on high (850w) for 4-5 mins, or until the fish is white and starts to separate into flakes.

5. Leave to stand for 2-3 minutes, then uncover and serve immediately with seasonal vegetables and garnish with lemon wedges if liked.
