Creamy cod
Ingredients:
2 skinless cod fillets, each weighing 175g
(6oz)
sea salt / freshly milled black pepper to taste
50g (2oz) watercress leaves
4 rounded tablespoons crème fraiche
1 rounded tablespoon horseradish
lemon wedges, to serve
To serve: seasonal vegetables of your choice

1. Place cod fillets side by side in Pyrex square optitherm microwave dish. Season with salt and pepper.
2. Roughly chop the watercress and mix in a bowl with crème fraiche, horseradish, salt and pepper.
3. Spoon equally over the cod fillets.
4. Put the lid loosely on top and microwave on high (850w) for 4-5 mins, or until the fish is white and starts to separate into flakes.
5. Leave to stand for 2-3 minutes, then uncover and serve immediately with seasonal vegetables and garnish with lemon wedges if liked.
