Courgette and Potato Soup by Louise, Riccall

Ingredients:

• 3 courgettes - total weigh 750 g
• 2 medium potatoes - 250 g
• 250 ml stock or water
• 3 cloves of garlic

Peel and dice the potato into cubes
do the same with the courgette, peel the garlic and roughly chop.

Add all the ingredients to a saucepan, bring to the boil and simmer until soft, about 30 mins.

Liquise or use potato masher for a thicker soup.

Serve.
