Chicken croquettes

Ingredients:

• 8 chicken breasts
• 2 tablespoons flour
• 1 chicken stock cube
• ½ teaspoon of five spices powder
• salt
• 1 egg
• 2 tablespoons milk
• 2½oz (75g) crushed cornflakes
• 2oz (60g) butter.

Roll up the chicken fillets and pierce with a wooden cocktail pick. Mix the flour, spices and salt in a glass bowl. Dip the chicken in this mixture, then in a egg and milk mixture, before rolling in the crushed cornflake. Cover and place in the refrigerator for one hour.
In the meantime, melt the butter and place two layers of absorbent kitchen towel in a glass dish. Arrange the chicken rolls in a single layer, brush lightly with the melted butter and cover with two more layers of absorbent kitchen paper. Cook for eight minutes in the microwave on a medium setting.
After eight minutes, turn the chicken pieces over, cover with absorbent paper and cook for another eight minutes before serving.
