CHOCOLATE MOELLEUX AND CHESTNUT MERINGUE CAKE

Ingredients:

100g of butter
200g of cooking chocolate
200g of sweet chestnut purée
2 tablespoons of corn flour
4 whole eggs
100g of glazed chestnut chips
3 egg whites (the yolks are set aside to make the custard)
2 tablespoons of icing sugar

Preheat the oven to 160°C

In a Pyrex glass mixing bowl, break the chocolate into pieces and add the butter. Melt the chocolate and butter in a microwave for 1 min 30 (or use a bain marie). Let the mixture rest for one minute and then mix with a spatula.

Add the sweet chestnut purée, the corn flour and the eggs. Beat well with a whisk. Finish by adding the glazed chestnut chips.

Pour the mixture into a buttered and floured springform tin. Place in a hot oven for 30 minutes.

Meanwhile, take another Pyrex glass mixing bowl and whisk the egg whites until stiff while gradually incorporating the icing sugar.

Once the 30 minutes are up, remove the cake from the oven and gently place the beaten egg white on the top of the cake with a spatula or, even better, a piping bag. Return to the oven and cook for 10 to 15 minutes (keep an eye on the colour of the meringue).

Leave the cake to cool before removing the cake mould (take a knife and gently run it around the edge of the cake to separate it from the cake mould).

You can decorate the cake with a few glazed chestnuts or sprinkle cocoa powder over it. You can also make a custard with the three remaining yolks as an accompaniment.

Piping bags are very easy to make if you do not have any. Take a plastic freezing bag and fill it with the mixture. Snip off a small corner (2mm) to make an opening and squeeze. This is a very easy way to decorate your dishes without creating a lot of work: simply throw away the used bag.
