Breast of chicken with seasonal vegetables

Ingredients:

• 500ml (18 fl oz) chicken stock or Chicken
• stock cube and boiling water
• 25g (1oz) fresh tarragon
• 2 chicken breasts
• 4 baby turnips
• 6 baby carrots
• 6 asparagus spears
• 6 new potatoes
• sea salt and freshly milled black pepper to taste

Method:

1.Pour the chicken stock and half of the tarragon into the base of the steamer and microwave on high for 5 minutes or until boiling.

2.Carefully remove steamer from microwave and place the chicken breasts and vegetables on top, season with salt and pepper and lay the remaining tarragon over the chicken.

3.Place the lid on top and put back into the microwave on a medium temperature for 5 minutes or until the chicken is tender.

4.Serve immediately.
