Bacon Potato Bake by Jan, Brentwood

Ingredients:

• 2 lb potatoes
• 1 largish onion
• 1/4 pint hot stock
• 1/4 pint milk
• 2 oz butter
• Salt and pepper
• 4 oz bacon
• 3 oz grated cheese
• Salt and freshly milled black pepper

Cooking Time:

45 min

Preheat oven to gas mark 4, 350F 180C generously butter a wide shall baking dish.
Pell potatoes
Cut into thinnish slices
Peel onion and chop it finely
Arrange a layer of potatoes over base of dish, followed by a sprinkling of onion and bacon.
Season with salt and pepper.
Continue with layers until everything is in and you finish with a layer of potatoes (seasoned) at the top.
Pour in the stock and the milk fleck the surface all over with dots of butter.
Finally top with grated cheese.
Place the dish on the highest shelf in the oven and leave it there for about 45 minutes or until the potatoes are cooked and the top layer is nicely golden brown.
